St. Joseph’s Food Pantry is its own 501(c)-3 non-profit organization registered with the State of Wyoming as of 2025. Previously, the Pantry was organized under the umbrella of St. Joseph’s Catholic Church as a non-profit since its inception in the 1980s.
With this independent non-profit status, St. Joseph’s Food Pantry will retain its Executive Director, Eva Estorga, while adding a new Board of Directors.
Eva Estorga, Executive Director
Eva has been the Pantry Director since 2016. Her passion for the Pantry’s mission is evident in all her work and relationships she has built. We are grateful for her dedication.
Fr. Michael Carr, Board President
Father Mike Carr, a priest of the Diocese of Cheyenne for some 57 years, is the Board President. During his priesthood, Fr. Carr had assignments at Our Lady of Fatima and Saint Anthony’s in Casper, St. Mary’s Cathedral and Saint Joseph’s in Cheyenne, Saint Joseph’s Children’s Home and Saint Rose of Lima in Torrington. Fr. Carr has always appreciated his time at Saint Joseph’s in Cheyenne, the parish that started St. Joseph’s Food Pantry. Upon his return to Cheyenne in retirement, Fr. Carr began volunteering at the Pantry. For several years, he delivered donated bread to the Pantry and also helped as a part of the human conveyor belt who moved food into storage rooms when the Pantry was located at the Parish Education Center.
Fr. Carr is proud of what the Pantry has grown to become. He has seen the Pantry grow from helping ten people a week to providing food to hundreds of families each day. He is happy to serve on its Board.
Rodney Vyff, Board Vice-President
Rodney Vyff is a retired Civil Engineer after 30 years of service in the commissioned corps of the US Public Health Service. He is serving on the Board of Directors as Chairman of the Facilities Committee and as Vice President. Rodney has been a St. Joseph’s Food Pantry volunteer since 2005. He works mostly in the warehouse: receiving new inventory and placing it in best location for storage, resetting the grocery boxing table for the next week and updating inventory for the Director’s reporting, as well planning the next week’s groceries. Rodney also uses various computer apps for reports, charts, floor plans, forms, etc.
Rodney’s other interests include hiking, attending exercise classes at the Cheyenne Family YMCA and some computer programming.
Marvin Espinoza, Board Treasurer
Marv Espinoza was born and raised in Cheyenne. He graduated from St. Mary’s High School in 1970, attended LCCC, Colorado State University, University of Wyoming and Leslie University. Marv holds a Bachelors in Marketing and Education, and a Masters in Computer Education. He is married to Kristi and they have four children and 13 grandchildren.
Marv taught Business at High School 3/Triumph High School for 32 years (retired 2007). He owned Insurance Financial Service for 36 years, retiring in 2021. Currently, he is the Owner/Preparer at Espinoza Taxes for 33 years, and the Broker/Owner of Espinoza Realty for 28 years. Marv is a board member for United Way, St. Mary’s School Foundation and St. Joseph’s Food Pantry. He is a past President of Retired Teacher’s Association. He enjoys working out including water aerobics, yoga, bike riding and walking. His hobbies include driving and collecting muscle cars.
Denise Hawkins, Board Secretary
Denise is serving as the Board Secretary as well as Donations Committee Chair. She has been a Pantry volunteer since 2016, and has served in most volunteer roles as well as a Lead Volunteer. Denise also manages the Pantry’s social media and website, and helps with grant writing and other office needs. She feels called to use her past work experience as the secretary for a foundation as well as knowledge in marketing and social media to help the Pantry grow and thrive.
Denise is a fine-art photographer and artist who enjoys camping, paddle-boarding, and travel with her husband, Mark, and dog. They are parents to two wonderful adult children.
Fr. Emilio Cabrera, Board Member
Emilio Cabrera is a Colombian priest ordained in 2000. He currently serves as pastor of St. Joseph Parish in Cheyenne, Wyoming. His pastoral commitment has led him to serve on the board of St. Joseph Food Pantry, where he actively contributes to the well-being of the local community.
Kathy Cunningham, Board Member
Kathy Cunningham has been a volunteer at St. Joseph’s Food Pantry since 2019. Along with her duties as a Board member, Kathy will be overseeing the Volunteer Committee. Recruitment of new volunteers and current volunteer retention will be the committee’s focus.
The Food Pantry is an invaluable community service that Kathy is proud to be a part of. She looks forward to serving as a Board member and continuing her service as volunteer.
Brian Horst, MD, Board Member
Dr. Horst has been a parishioner at Holy Trinity Catholic Church since 2014. He has been a pediatrician for 24 years, the last 10 at Cheyenne Children’s Clinic. Dr. Horst has been a volunteer at the Pantry since 2020 as a weekly volunteer as well as doing weekend donation pickups from Sam’s Club.
Dr. Horst is married to Leah Horst, also volunteer at Pantry, and they have three children. Their youngest volunteers with donation pickup as well. His hobbies include camping and hiking with family, hunting, and all outdoor activities.
